This creamy potato soup is incredible on a chilly winter evening. I served mine with warm sourdough rolls with fresh butter. Made with raw milk, raw cheese and bone broth, this soup has tons of nutrients and vitamins.
As an extra note, the ingredients I listed are going to be the highest quality ingredients that will make this soup the most nourishing – however, feel free to replace them as needed with whatever quality you can provide. If you don’t have raw milk feel free to use whatever milk you can get your hands on. If you don’t have homemade bone broth, feel free to use chicken stock. I always encourage buying the highest quality that you can, but that can look different for every person!
Creamy Potato Soup Recipe
Ingredients:
4-5 Russet Potatoes (about 4 cups)
6 slices of pasture raised bacon
1 yellow onion
3 cloves of garlic
1/4 cup of sprouted wheat flour
2 cups of chicken bone broth
2 cups of raw milk
1/2 cup of pasture raised cream cheese
1 cup of shredded raw cheese
1/2 tsp salt & pepper
Instructions:
Peel potatoes and cut into cubes. Cover with water in a pot and bring to a boil, cook until fork tender (10-15 minutes).
Cook 6 slices of bacon on the stovetop. Set aside when done and reserve bacon grease.
In a pot, add bacon grease and heat over medium heat. Add onion and cook until translucent. Add minced garlic and cook for another 1-2 minutes. Pour flour in pot and stir to coat the onions and garlic.
Add in Bone broth and raw milk and stir to combine. Once mixture has heated, add in 1/2 cup of cream cheese. Whisk to help break apart the cream cheese. Adjust heat to medium-high to allow soup to come to a gentle boil for 5-10 minutes.
While soup is boiling, drain potatoes and mash until desired texture has been reached.
Reduce heat and add in shredded cheese, potatoes, salt and pepper. Stir to combine. If you prefer a smooth soup, pour in a blender (or use an immersion blender) and blend until smooth. If you prefer a chunky soup (like me!) leave as is.
Scoop into bowls and top with broken up pieces of bacon.
